We like to do a lot of experiments with condiments here at the My Foodie Duty Test Kitchen. Usually it is as simple as coating chicken or turkey with mayonnaise to keep it nice and juicy while roasting it in the oven or rubbing some really thick New York Steaks with spicy brown mustard before throwing them on the grill to give them a nice crust.
This week we discovered a line of sauces, more specifically flavored mayos, called Sir Kensington’s. The first one that we were interested in was the fry sauce, the store was out of it so it didn’t come in our grocery delivery. We did get a substitute though…Sir Kensington’s Chipotle Mayo.

We decided to try this sauce on some boneless, skinless chicken breasts and cook it in the oven. It is suggested by the internet that marinating last at least 15-30 minutes…we marinated for two days! We wanted maximum flavor, our supervisory Chef on duty (we have two) suggested that we pat the chicken breasts with a paper towel to remove any moisture, sprinkle both sides with salt and pepper, then spread the sauce on both sides, and if we wanted to, add any other seasonings. We only added a little McCormick® Grill Mates® Roasted Garlic & Herb Seasoning.

We let the chicken breasts marinate in the mayo in a plastic wrap sealed container for two days. Seems a little much? To be honest we got busy and were craving pizza so ordered out…okay we got lazy. Back to the chicken. To cook it, we preheated the oven to 400º and placed the chicken breasts on a foil lined cookie sheet. On the other side of the cookie sheet we tossed, sliced mushrooms, Comets™ tomatoes, and whole baby potatoes in extra virgin olive oil, salt and pepper. The cookie sheet roasted in the oven for 45 minutes…OH THE SMELL!

The Chipotle Mayo Chicken was juicy, and had a little kick in the aftertaste. This was one of those My Foodie Duty Test Kitchen moments that we are proud of! We consulted one of our supervisory chefs, there were no smoke alarm incidents that freaked the cats out, we didn’t follow a recipe, and the meal was delicious.

Here in the My Foodie Duty Test Kitchen we are still learning about presentation but we’ll eventually get that down with practice. Since we’ve been confined to the house all we have time to do is order delivery, cook, and eat!

CHIPOTLE MAYO CHICKEN BREAST RECIPE
Preheat oven to 400º
- 2 boneless skinless chicken breasts
- 1/4 to 1/2 cup Sir Kensington’s Chipotle Mayo
- 1 tsp salt
- 1 tsp pepper
We marinated 2 days but this can be cooked within 15 minutes of coating with mayonnaise and seasonings.
- Pat chicken breasts dry with paper towel.
- Sprinkle both sides of chicken breasts with salt & pepper.
- Spread Sir Kensington’s Chipotle Mayo on both sides of chicken breasts with brush or spoon.
- Place chicken breasts on foil lined cookie sheet.
- Bake in oven for 45-60 minutes or until cooked thoroughly.
